Garrison Brothers: The Insider's Experience

By Stephanie Whitworth · May 5, 2026 · 7 min read

I'll never forget the first time I drove down that caliche road in Hye. It was 2010, the oak trees were just leafing out, and Dan Garrison was standing by the still house with his arms crossed, telling me his vision for what this place could become. Not a tasting room. Not a tourist stop. A destination.

He asked me to help build the hospitality program — to design how guests would experience Texas bourbon for the very first time. Back then, most people didn't even know Texas made bourbon. There was no modern 290 wine trail yet. The road between Fredericksburg and Johnson City was just ranches, fence posts, and the kind of quiet that makes you pull over just to listen.

We built something real out there. Not a script — an experience. The kind where the person pouring your bourbon knows the barrel it aged in and can tell you what the weather was like the season it went in. That philosophy became the foundation of everything I do with 290TX Tours.

What Makes the Garrison Experience Different

Here's what most people don't realize: Garrison Brothers isn't just a distillery that happens to be in Texas. It's the first legal bourbon distilleryin Texas — and that distinction matters. Every bottle of their bourbon is made with Texas corn, aged in Texas heat (which accelerates the aging process in ways Kentucky can't match), and bottled right there on that ranch in Hye.

When you visit with us, you don't just do the public tour. You walk in with someone who knows the team, knows the property, and knows the stories that don't make it onto the website. I can show you the exact spot where we designed the first tasting flow. I can introduce you to the people who make this place tick, not just the ones working the bar.

The Tasting: Small Batch, Balmorhea, and Beyond

The standard tasting is excellent — their Small Batch is smooth, warm, and unmistakably Texan. But if your group is up for it, we always recommend adding the Balmorhea pour. It's their flagship, aged longer than the small batch, and it has a complexity that will convert even the most committed wine drinkers. The finish stays with you. You'll be thinking about it at dinner.

Why We Pair It with Wineries

Our “Full Trail” tour combines Garrison Brothers with a couple of our favorite wineries. This isn't a gimmick — it's a deliberate arc. We start with wine to warm the palate, build to the bourbon for depth and richness, and finish the day with something light and celebratory. By the time you're done, you've tasted the full spectrum of what Hill Country produces, and you understand why this region is special.

A Place That Means Something to Us

I won't pretend to be objective about Garrison Brothers. This place is part of our story — it's where the 290TX philosophy was born. The idea that hospitality isn't just being polite; it's knowing your guest, anticipating what they need, and making them feel like they belong. Dan taught me that, and I carry it into every single tour we lead.
